My reason for considering this is that I want a vintage feel to my kitchen, with almost-white cabinets, but the pre-manufactured ones I see all look too "new" and too "perfect" for my taste.

Ideally I'd love to have my cabinet edges sanded to make them less perfectly square, and then have the cabinets painted with milk-paint or some modern equivalent if there is one. Scherrs, Barkers, Conestoga resellers and maybe some local guys can produce decent boxes. They won't be cheap Chinese ply and crap hardware though. So they won't be inexpensive to begin with, even unfinished. Maybe half of what a good quality line would be. Say 10K for an average kitchen rather than 20K. And you'll have to put them together and finish them and factor that into the costs.

Then there's the finish. If you are OK with a much less durable finish, then go ahead with your plan. It will certainly be vintage appearing with the chips and stains. However, the only way to do this at all cost effectively is DIY for the assembky and finish portion.

And then put zero value on your time. If you envision doing this piecemeal assembly line with paid labor, it will actually come out more than just buying from a good quality company that offers distressing and a matte finish as one of their choices That will then pass all of the KCMA testing.
